Healthy Banana Bread (Can be made Gluten Free)

An easy-peasy recipe to follow on how to create a healthy and tasty Banana Bread. A spiced, vanilla flavoured, healthy guide to a scrumptious treat to enjoy on a Sunday morning with a coffee in hand.

Ingredients:
3 ripe bananas
80ml neutral oil (sunflower oil)
110g brown sugar
2 eggs
200g flour (or gluten free alternative)
3 tsps baking soda
1 pinch of salt
1 vanilla bean
1 pinch of cinnamon
...and butter to grease the loaf tin
Method:
Preheat the oven to 180°C (160°C Fan) or 325°F / gas 3.
Grease the loaf tin (23cmx10cm) with butter.
Mash the bananas in a bowl with a fork.
Next, slice down the middle of the vanilla bean and scrape out the insides into a separate bowl.
Then combine the oil, brown sugar and eggs in another separate bowl and mix.
Add the flour, baking soda, salt and cinnamon to the extracted vanilla and mix until evenly integrated.
After that, add the flour mixture to the oil mixture and mix again.
Following that, add the mashed banana to the mixture and mix once again to evenly incorporate each ingredient.
Next, put the mixture into the tin and set in the oven for around 50-55 minutes.
Once the timer has gone, remove from the oven and set aside to cool, make sure before you do so, that the loaf is fully cooked. This can be done by sticking a sharp knife into the centre and if there is any residue left when it is taken out, it means that it needs more time. If not, leave your masterpiece to cool.
